Banana Bro'cakes

Pancakes are every person’s dream on a slow Sunday morning. As a fitness and health professional, I know my waistline can’t afford to have the real deal every damn weekend, so I made it my mission to perfect the protein pancake…..and I did.

These are hands down the fluffiest, tastiest, protein pancakes I’ve made to date. With no refined sugar, gluten, or weird additives, these are a great post-workout breakfast. I love to top mine with a little peanut or cashew butter and a tbsp. of grade B pure maple syrup.  

Here's a toast to the healthy alternatives that actually taste better than the real deal... Cheers!

INGREDIENTS

-2 ripe bananas

-2 eggs

-2 tbsp chia seed

-1 tbsp flax seed

-2 tbsp grass-fed Greek yogurt

-1 scoop vanilla protein powder

-dash baking powder

-dash vanilla extract

-coconut oil


METHOD

Peel bananas and crack eggs into blender. Add rest of ingredients and blend on high for 30 seconds until well combined. Melt 1/2 tsp coconut oil in pan on med-low heat. Pour in 1 pancake serving (recipe makes about 4). Cover with clear glass lid. Leave on med-low heat until bubbles start to form throughout pancake. Flip over and cover with lid for another 1-2 minutes until pancake easily slides out.
