These no-bake bites are so easy and perfect for on-the-go snacks, a pre-workout fuel, or a post-workout protein source. I sometimes have them at night to fix my predominant sweet tooth. I'll usually sprinkle half with espresso powder for a quick pick-me-up if I have them in the morning (as the caffeine will keep me up). For the peanut butter, make sure the ONLY ingredient in your peanut butter is peanuts! It's that simple.

INGREDIENTS
-1 c old fashioned oats
-1/2 c peanut butter
-1/3 c ground flax seed
-1/3 c raw honey
-1 tbsp vanilla extract
-dash cinnamon
-1/3 c dark chocolate chips
-espresso powder (optional)

METHOD
-Put oats, flax, vanilla, and cinnamon in a bowl. Melt honey and peanut butter in microwave for 10-15 sec. Stir all ingredients into bowl and mix thoroughly. Let cool for a couple of minutes before adding in chocolate chips (so they don't melt). Place mixture in fridge for 20 minutes. Roll into 1-inch balls and keep in refrigerator. Yields about 20 bites.
