Southwestern Avocado Boats ...that taste like Taco Bell
It's no secret; we all crave Taco Bell every now and again. And more than likely, you have a stash of those Taco bell hot sauce packets hidden in one of your drawers (I know I do). So, next time you're craving a gordito or a crunchwrap supreme, give these Southwestern Avocado Boats a try.
INGREDIENTS
- 2 large ripe avocados
- 1 can of organic sweet corn
- 1 can of black beans
- 1/2 medium red onion
- 1 vine-ripened tomatoes
- 1 can diced tomatoes
- handful cilantro
- 1 small jalapeno
- salt
- pepper
- garlic powder
- juice from 1 medium lime
- 6-8 Taco Bell hot sauce packets
DIRECTIONS
Dice onion, jalapeno, cilantro, and fresh tomato into small pieces and add to large mixing bowl. Add in can of tomatoes, corn, and beans (be sure to drain liquid from cans). Add fresh lime juice. Add salt, pepper, and garlic powder to taste. Finally, add in Taco Bell hot sauce packets. Mix thoroughly. Place in fridge to chill for 10-15 minutes.
In the meantime, slice avocados in half and discard of pit. In order to make the holes large enough to stuff, you may have to remove more avocado. Scoop chilled salsa mixture into avocados. Enjoy!
