Ever crave pizza? I do...like ALLLL the time (I blame my mother). Using a portobello mushroom in place of the pizza crust is almost as good as the real thing...well we can pretend anyway, but it's definitely healthier. Try this meaty option next time you are craving Dominos or Pizza Hut alike.

INGREDIENTS:
2 portobello mushroom caps
1/2 can of tomato paste
6 leaves fresh basil
6 small chunks fresh mozzarella
2 tbsp balsamic vinegar
fresh oregano
himalayan pink salt
crushed red pepper


METHOD:
Preheat oven to 375. Place mushroom caps upside down on non-stick baking sheet (remove stem if desired). Spread tomato paste evenly on both mushroom caps. Sprinkle pinch of salt, red pepper flakes and oregano on each cap. Place 3 basil leaves on each cap. Place 3 chunks of mozzarella on each cap. Drizzle 1 tbsp of balsamic vinegar on each mushroom. Bake for 18-20 minutes.
