Sweet potatoes have over 400% of your daily Vitamin A as well as loads of fiber and potassium. They are also lower on the glycemic index than white potatoes. These chips are a great healthy alternative for chips and salsa addicts, like myself. I love to pair mine with homemadeguacamole and spicy black beans. ENJOY!
METHOD Preheat oven to 250. Peel sweet potato and thinly slice into 'chips.' Place slices in large bowl. Add olive oil, lime juice and tamari. Add sea salt, pepper and garlic powder to taste. Toss until potatoes are lightly coated. Place one layer of potatoes on a parchment-lined baking sheet. Put in oven and bake for 45 minutes then flip potatoes over. Bake for another 30-40 minutes or until chips are golden brown. Remove and let cool.
